Baked Gingerbread & Cranberry Oatmeal

Baked Gingerbread & Cranberry Oatmeal

Gluten-Free

Serves 4

Ingredients

  • 2 c old-fashioned oats

  • 1 tbsp ground flaxseed

  • ¼ tsp ginger

  • ¼ tsp cinnamon

  • ¼ tsp allspice

  • tsp nutmeg

  • tsp cloves

  • 1 tsp baking powder

  • ¼ tsp salt

  • 1 ½ c milk of choice

  • 3 tbsp egg whites

  • 2 tbsp molasses

  • 1/2 tsp vanilla extract

  • 1 c cranberries

Toppings

  • Yogurt

  • Molasses

Directions

  1. Preheat the oven to 375 °F and grease a 9x11" baking pan.

  2. Combine the oats, ground flaxseed, spices, baking powder, and salt in a bowl.

  3. In a separate bowl, whisk together the rest of the ingredients (except for the cranberries).

  4. Add the wet to the dry ingredients and fold together until evenly combined.

  5. Add in the cranberries and fold them in until they are evenly incorporated throughout the mixture.

  6. Pour the mixture into your pre-greased pan and baked for 30 to 35 minutes or until a toothpick comes out clean clean, the mixture is set, and the oats are golden.

  7. Enjoy warm and topped with yogurt and molasses!
