Spelt Chocolate & Sunflower Breakfast Cookies

For a perfectly sweet and fluffy nutrient-packed breakfast!!


 


Spelt Chocolate & Sunflower Breakfast Cookies

Makes ~10 cookies


Ingredients

  • 1 ½ c spelt flour

  • c rolled oats

  • c coconut sugar

  • ¼ tsp nutmeg

  • 1 tsp baking soda

  • ½ tsp baking powder

  • ½ tsp kosher salt

  • 1 c mashed banana

  • ¼ c maple syrup

  • 1 egg + 1 yolk

  • 1 tsp vanilla extract

  • 3.5 oz chopped chocolate

  • c sunflower seeds


Directions

  1. Preheat the oven to 300 °F and line two baking sheets with parchment paper.

  2. In a medium-sized bowl, whisk together the spelt flour, oats, coconut sugar, nutmeg, baking soda, baking powder, and salt until evenly combined.

  3. In a separate small bowl, combine the mashed banana, maple syrup, egg and yolk, and vanilla until smooth.

  4. Add the wet ingredients to the dry and fold until just combined.

  5. Then, fold in the chopped chocolate and sunflower seeds until evenly disbursed (making sure not to over mix the dough.

  6. Scoop out 1.5 to 2 tablespoons of dough to form your cookies and disperse them across your parchment-lined cookie sheets. Make sure to leave space between them, for they will spread in the oven!

  7. Bake for 12-15 minutes and let cool for at least 5 minutes before enjoying!
