Go Green Gazpacho

Bright, refreshing, and packed with lots of good-for-you greens.

 

Easy Green Gazpacho

Vegan, Gluten-Free


Ingredients

  • 2 English cucumbers

  • ~1.5 c chopped celery

  • 4 stalks of green onion

  • 1/2 avocado

  • ~2 c spinach (packed)

  • 5 sprigs of fresh thyme

  • 1 clove garlic (optionally roasted)

  • Juice of 1/2 lemon

  • ~1 c water

  • Salt and pepper to taste

Optional toppings: Spiced Chickpea Croutons, plain Greek yogurt, crème frâiche, sour cream, fresh thyme, chives, and/or green onion


Directions

  1. Blend all of the ingredients together in a high-powered blender until you achieve a cohesive, slightly thick purée. You can add more or less water, depending on how thick you want the soup to be.
