Go Green Gazpacho
Bright, refreshing, and packed with lots of good-for-you greens.

Easy Green Gazpacho
Vegan, Gluten-Free
Ingredients
2 English cucumbers
~1.5 c chopped celery
4 stalks of green onion
1/2 avocado
~2 c spinach (packed)
5 sprigs of fresh thyme
1 clove garlic (optionally roasted)
Juice of 1/2 lemon
~1 c water
Salt and pepper to taste
Optional toppings: Spiced Chickpea Croutons, plain Greek yogurt, crème frâiche, sour cream, fresh thyme, chives, and/or green onion
Directions
Blend all of the ingredients together in a high-powered blender until you achieve a cohesive, slightly thick purée. You can add more or less water, depending on how thick you want the soup to be.
