Jumbo Banana Chocolate Chip Muffin Cookies

Makes ~8 cookies


Ingredients

  • 2 c AP flour

  • 1/3 c rolled oats

  • 1/2 tsp baking soda

  • 3/4 tsp baking powder

  • 1/2 tsp espresso powder

  • 1/2 tsp kosher salt

  • 1 large overripe banana, mashed

  • ¼ c maple syrup

  • 2 eggs

  • 1 tsp vanilla extract

  • 1 c dark chocolate chips


Directions

  1. Preheat the oven to 350 °F and line two baking sheets with parchment paper.

  2. In a medium-sized bowl, whisk together the flour, oats, espresso powder, baking soda, baking powder, and salt until evenly combined.

  3. In a separate small bowl, combine the mashed banana, maple syrup, egga, and vanilla until smooth.

  4. Add the wet ingredients to the dry and fold until just combined.

  5. Fold in the chocolate chips until evenly disbursed (making sure not to over mix the dough. Place the dough in the fridge to cool for 10-15 minutes.

  6. Scoop out your dough into 8 large mounds across the sheet pans. Make sure to leave space between them; they will spread a but in the oven!

  7. Bake for 15 minutes and let cool for at least 5 minutes before enjoying!
