Pumpkin Pie Overnight Oats

An autumn breakfast with a prep as easy as pie!


 

Pumpkin Pie Overnight Oats

Vegan, Gluten-Free

Serves 1



Ingredients

  • 1/2 c oats

  • 1/2 tsp cinnamon

  • 1/4 tsp nutmeg

  • 1/8 tsp cloves

  • 1 tsp ground flaxseed, packed

  • 2 heaping tbsp pumpkin purée

  • 1/3 c almond milk

  • 2 tbsp maple syrup

Top with:

  • Your favorite nut butter (I recommend maple almond butter!)

  • Molasses or maple syrup

  • Pecans

  • Pumpkin seeds


Directions

  1. Combine all ingredients in a mason jar or airtight container.

  2. Refrigerate for at least 4 hours (preferably overnight) before topping with your favorite add-ins and enjoying!
