Vegan Chimichurri & Mushroom Mini Pizza

A quick an easy meal to satisfy your pizza cravings!


Vegan Chimichurri & Mushroom Mini Pizza

Serves 1


  • 5-6 tbsp AP flour

  • ½ tsp baking power

  • ¼ tsp kosher salt (plus some more for the mushrooms)

  • ¼ c plain vegan Greek yogurt*

  • 1 flax egg*

  • Evoo

  • ¼ c sliced mushrooms

  • 1 clove minced garlic

  • Ground pepper

  • Chimichurri sauce (I used Haven's Kitchen's)

  • Nutritional yeast

  • Red pepper flakes


  1. Preheat the oven to 375 °F and line a baking sheet with parchment paper and some olive oil.

  2. In a small bowl, whisk together the flour, baking powder, and salt.

  3. Add in the Greek yogurt and flax egg and knead until your dough is smooth and not super sticky (add a bit more flour as needed).

  4. Form a flat circle out of your dough, making sure to press it down evenly and thinner towards the center to form a small crust around the circumference.

  5. Bake for 15-17 minutes until golden brown.

  6. Meanwhile, sauté the mushrooms in some evoo with the minced garlic and salt and pepper to taste over medium heat until soft and cooked through.

  7. Once removed from the oven, immediately brush the pizza crust with some evoo.

  8. Generously top with chimichurri sauce, nutritional yeast, the sautéd mushrooms, and red pepper flakes.

  9. Cut into four cute little slices and enjoy!

*Substitutions for a non-vegan version:

  • use regular plain Greek yogurt

  • one whole egg or egg white in place of the flax egg
